In order to achieve the Golden Cup Standards of the Specialty Coffee Association of America (SCAA), it is recommended that filtered water that contains between 75-150 parts per million (ppm) of Total Dissolved Solids (TDS) produces the best tasting coffee (espresso-brewing water is recommended with a TDS level closer to 75 ppm). Recommendations also include water free from objectionable tastes and odors, such as chlorine and chloramines.

Coffee brewed with very high TDS water will taste very dull and cloudy. Very low TDS water can produce coffee with edge, unrefined flavors and often exaggerated brightness.

According to the Specialty Coffee Association of America (SCAA), the ideal TDS range for the water used to brew coffee is 75-150 ppm. The target TDS is 130 ppm. The target TDS of 130 ppm should lead to a properly extracted cup of coffee with balanced flavors and acidity.
